Elderberry Gummies

I’ve recently started turning our Chai Elderberry Syrup into collagen rich gummies. These are easier for everyone to grab in the morning, or really anytime. You do not need any fancy molds, though if you have younger children they may love the fun shapes you can find on Amazon. I just find they can be messy and hard to clean. I simply use a 9x9 baking dish for small batches and a 9x13 dish for double batches.

Elderberry Gummies

2 Tablespoons Gelatin Powder ( I use Great Lakes Unflavored Gelatin) There are many kinds of gelatin. You want the kind that will gel. Some are made to dissolve in coffee etc. That kind is called hydrolysate or peptides. Don’t use that kind.

1/2 cup of cold water

Add the gelatin to the cold water and make a bloom. This takes 5 minutes. Your gelatin will dissolve in the water and thicken. This is good. It will help with disbursement in the elderberry syrup.

While the gelatin is blooming…

Heat 1.5 cups of elderberry syrup in a medium saucepan on the stove. You want it hot but not boiling. Since the elderberry syrup is already sweetened with honey, there is no need to add any more sweetener.

Add your bloomed gelatin into the hot syrup and whisk

Once incorporated transfer to a 9x9 glass baking dish.

Let cool for several hours or over night in the fridge.

Cut into half inch squares.

Store in a mason jar in the fridge. Will last 2-4 weeks in the fridge.

Dose: Children can take one to two gummies a day for prevention of colds and flu. Adults can take up to 4-6 a day for prevention. Increase your intake at the onset of cold or flu.

*You can use any homemade elderberry syrup in this recipe.
