Easy Einkorn Popovers

If you find your kids are eating you out of house and home, or you are searching the pantry for a quick meal, popovers will become your new best friend. 

Popovers are the easiest most versatile snack,  breakfast, or dinner side. Pair them with poached eggs, salad, or soup.  They take only a few ingredients and can be created sweet or savory. Experiment by adding herbs, cheese, or spices to this recipe. Top them with jam, butter, or soft goat cheese. 

Ingredients

3 eggs 

1 1/2 cups whole milk, we prefer raw milk

1 1/2 cups Einkorn flour or All purpose

3/4 teaspoon sea salt

3 TBLS melted butter

 

Instructions

  • Preheat oven to 450° and place popover pan in oven. You can also use a muffin pan if you do not have a popover pan. 

  • Combine flour and salt in a bowl and set aside

  • In another bowl whisk together the milk and egg until very frothy 

  • Combine the flour mixture and the egg mixture until only a few lumps still    remain. The batter will be similar to pancake batter. 

  • Remove pan from oven and using a pastry brush, coat the cups with melted butter. 

  • Fill cups 3/4 full and bake  for 20 minutes then reduce heat to 350° and bake another 20 minutes. 

  • Take popovers out of pan and flip the popovers onto a cooling rack.  Serve warm. 

  • Pro Tip - Do not open the oven door while baking. This will deflate the popovers. You want to to have as much heat in the oven so the popovers turn out light and airy.
