The First Taste of Summer

Strawberries! Summer is in every bite. We are reaping the harvest of our first strawberry patch that we planted last May. We are loving the Early Glow variety right now. They may just be our favorite. The Early Glow has that full strawberry taste. We have several other varieties that we planted to stagger the picking times. I think Chancellor is next and then Ozark Beauty. Right now we are enjoying the family time spent picking in the evenings just as much as we are enjoying eating them. The jam has been made and next on the list is strawberry wine. I also have the ingredients for homemade vanilla ice cream with fresh strawberries on top. I use this ice cream maker and I love, love, love it! Think I might make some more baked oatmeal this week for breakfast. You can too! It is awesome with what else, fresh strawberries, coconut milk, and a drizzle of honey. My MIL adds grated carrot and apple to her oatmeal batter and so I tried it and loved the texture. You got to try it.

Rise and Shine Baked Oatmeal

3/4 c. oil

1/2 c. honey

3 eggs

3/4 tsp salt

3 tsp baking powder

4 1/2 c. quick oats

1 1/2 c. milk

1 grated carrot

1 grated apple

1/2 cup coconut

Mix all ingredients and pour into a greased 9x13 pan.

Topping

3 Tbls butter

1/4 cup whole oats

3 Tbls flour( I use oat flour)

3Tbls brown sugar

Mix until crumbly and add to the top of the oatmeal. Sprinkle it with cinnamon and bake for 45 minutes at 350
