Elderflower & Honey Cordial

We planted three elderberry bushes three years ago. Last year we had a large harvest of berries and this year we had enough to harvest some flowers to make a few beverages. There is still time in the season to try concocting with these fragrant flowers. You can make cordials, infused liquors, and jellies. We experimented with a cordial recipe and it turned out to be a picnic treat for the girls who rarely drink anything other than water. We hope you love it.

Elderflower & Honey Cordial

6-8 large flower heads with flowers removed from the stems
Zest and juice of 2 lemons, 1 orange, 1 lime
1 cup of raw local honey
1 gallon of water

Boil one gallon of water add flowers and zest. Let steep overnight.
In the morning strain the liquid by using a mesh strainer or cheesecloth. Feed your chickens the flowers and zest.
To the cordial add the citrus juice and honey. Bring to a simmer and stir until honey is incorporated.
Let cool and bottle up.
