Coconut (No Oat) Granola
Switching to low grain consumption had me missing my homemade granola. Just because you omit something from your life does not mean you can’t have it. Simply crowd that food out with a similar style and or texture. For us all we had to do was swap out oats with organic unsweetened coconut flakes. The larger flakes work best. In this case I had the small flakes on hand and that’s what you see here. Of course always try to source organic ingredients.
¼ cup unrefined coconut oil
¼ cup peanut butter or your choice of nut butter
2 TBLS Maple syrup
4 cups flaked unsweetened coconut
2 cups sliced almonds
1 cup dried fruit such as raisins or cranberries
1 tsp sea salt
Melt the oil and nut butter. Add the syrup and vanilla.
Take off the heat and stir in everything except the dried fruit.
Mix and lay out on a parchment covered baking sheet. Bake at 300 degrees for 20-30 minutes. Stir often so it does not burn.
Toss in the dried fruit and let cool before transferring to an airtight container. Store in the fridge
